{June 11, 2010}   Easy Fruit Salad

It’s fruit season!  As enjoyable as it is to munch on a whole apple, sometimes you want to dress up your fruit a bit; but just a bit.  This is the absolute simplest recipe I know, including oatmeal.  If you aren’t pitting cherries for your fruit salad, as I did this morning, it can even be thrown together as you head out the door to a barbecue!  Here’s what you’ll need:

  • 8 or 9 cups of fresh fruit in bite-size pieces (I used 2 bananas, 2 large pears, and 3 cups of halved cherries today, but other fruits that have worked well are pineapple, grapes, strawberries, apples, honeydew and cantaloupe.)
  • a scant cup (or about half a small can) of coconut milk
  • a liberal sprinkling of cinnamon
  • 1 tsp real maple syrup as sweetener, use a bit more or less to taste

Put everything in a large bowl and stir to combine.  Serve right away or refrigerate covered, and stir again just before serving.


This sounds delicious! I love Coconut milk in anything…:)
